Most of us learned how to change strings from trial and error, and not all of us do it correctly. By 'correctly' I mean that it should not be difficult and it should not ruin the tone of a new set of strings.

A few additional tips:
Bend or lightly pull on the string to get the tension out of it. This will help them stay in tune faster. DON'T treat the guitar like a bow and arrow or you will break a string.
When adjusting the pitch, end by tuning the pitch up so that the gears will not slip downward. This can be a problem on some guitars.
Do not have too many turns of string around the post. This can dull the sound and also bring the string from the nut to the post at a bad angle.
